stress color changes...Martin???

Yoyo suggested I post this question here as Martin may have a book on fish behavior that would answer it.

The situation is two female mollies in a tank...one stressing out the other who turns, within minutes, dark grey (white is usual color). Upon separating them, within minutes again, she has returned to her normal color.

What is going on physiologically speaking to create this sudden change in color....some thoughts so far on the FWF have been cells opening and closing that change color or increased circulation of blood near surface of body....

does anyone here know or Martin does your book explain this? This much I know: it is stress related.
