pH Importance

I'm wondering just how important pH testing is. I've had Aquariums since the 60's and have never bothered checking it. I currently have a 60 gallon tank and two 29 gallon tanks with old fish in them(some 20 year olds). All I do is change the water monthly, 12 hours of light a day and give them a brine shrimp, bloodworms and flake food every other day. Is it just that I happen to live where there is good water? They tell us here in the Arizona desert that we have some of the worst water in the country. What do you think?
