I'm real lazy about water tests, too. I have to do pH tests, because my discus are much happier at a pH that's lower than comes out of the tap, but I hardly ever do the other tests because, for one thing, I can smell nitrite - which I only have when setting up a new tank, anyway. (Yes, I was asked once: how does nitrite smell? A kind of sweet ashy smell. But I don't know if other people can smell it - I'm a "nose" as the perfumers say...)

Water changes keep the nitrAte down. Every now and then I actually test for it.

Does this make me a "moderate" heathen? :-)
