Substrate for new loach tank

My clown loaches are finally getting a new, larger tank, and I'm wondering what size substrate would be best. It will be a planted tank with a layer of flourite, covered by gravel. I was wondering if the smallest gravel (I was thinking of something called "bits of walnut") is best, or something a bit larger? I had thought about doing half of the tank in sand since I know they like to dig, but I can't think of a good way to keep it separate from the flourite/gravel layer, and while it's a bigger tank (38 gallons) it's still not huge enough to do lots of different aquascaping.

Any suggestions would be appreciated!
