Dunno about the number you'll need. I'd just get a couple and throw them in! (But that's the way I do most things). Any plant matter that actively grows in the aquarium should remove at least *some* of the nitrates but I'm no expert on the actual figures.

I bought a single java fern in a pot a couple of years ago and it now fills (literally) all my tanks. As a rough guestimate I'd say I have in total over 200 8"+ leaves of this stuff plus hundreds more little offspring. I throw a lot of it away along with handfuls of java moss and I've never done anything special for it.
